Chef Will started cooking at 18 at Vignola Cinque-terre while attending culinary school. The young chef joined the kitchen at Portland’s Miyake, under James Beard nominated Chef Masa Miyake as a Sous Chef for 3 years. There he gained a knowledge and passion for Japanese cuisine. This Eastern flare shines through in many Brew Haus Specials. He returned to Vignola Cinque Terre as Executive Sous Chef, trained in Italy & France, and spent a year at a fine dining Italian restaurant in St. John US virgin island called Extra Virgin Bistro where he made everything in house from cheese to cured meats. As our head chef, Will utilizes his expansive and unique expertise to create an exceptional dining experience.
